Nutty Quinoa Breakfast Porridge

This warming breakfast porridge is a healthy winter breakfast packed full of vitamins, minerals, antioxidants, protein and fibre.

Ingredients:

  • 100g Raw Quinoa
  • 2x 500mL batches of Water
  • 200mL Almond Milk 
  • 2 Tblsp Almond Meal
  • 1 Tblsp Chia Seeds
  • 2-3 Chopped Figs
  • 1 Mashed Bannana
  • Pinch of Cinnamon and Nutmeg

Method:

Soak the Quinoa in 500mL of water for 15 mins. Drain and place in a saucepan with the other 500mL of fresh water. Bring to the boil, reduce the heat and simmer for 15-20mins until the grains start to split. Drain any excess water then add remaining ingredients. Stir through and once the milk has been fully absorbed simply serve and enjoy.
