Coconut Breakfast Crepes

Coconut Crepes

These Coconut flour crepes are a delicious and nutritious breakfast treat. Quick and easy to make and sure to please even the fussiest eaters.

Ingredients:

  • 6 Free Range Eggs
  • 1 Tsp Banaban Coconut Oil
  • 1/2 Tsp Vanilla Essence
  • 1 Tblsp Nakula Coconut Cream
  • 1 Tsp Comvita Manuka Honey
  • 4 Tblsp Banaban Coconut Flour
  • Extra Coconut Oil for cooking

Method:

Wisk the Eggs, Coconut Oil, Vanilla Essence, Coconut Cream and Manuka Honey until the consistency is light and fluffy. Slowly add the Coconut Flour until well combined. 

In a pan on medium heat, add a small of Coconut Oil, then a thin layer of batter (3-4 Tblsp) and spread over base of pan by lifting and tilting the pan. Leave for approx 60 seconds to brown, flip, then repeat until the other side is browned also.

Add the toppings of your choice... We recommend some seasonal berries and Coconut Cream with a sprinkle of Cinnamon. Eat and Enjoy!
