Everyone loves pancakes!!! And these pancakes will love you!!! They are easy to digest, full of goodness, low carb and high protein.
1 Cup Almond Meal
1/3 Cup Big Tree Farms Coconut Sugar
2 Free Range Eggs
1 Tsp Cinnamon Powder
200mL Almond Milk
20g Coconut Oil + extra for frying
1/2 Tsp Bi-Carb
Coconut Oil for frying
Place all ingredients into a food processor or blender for two minutes. Heat your fry pan on medium and add a small amount of Coconut Oil. Spoon the batter into pan and cook for approx 1-2 minutes depending before flipping to cook the other side for a further minute or two. Serve with some TRU RA Cacao Nibs and Coconut Nectar for a low GI and low sugar treat.
