- 2 Free Range Eggs
- A small handful of fresh spinach
- 1 tblsp Coconut Oil
Heat a frypan with the Coconut Oil on medium. Add the spinach. Crack the eggs over top of the spinach. Break the yolk and mix it all around in the pan until the yolk is spread evenly through the spinach and egg whites. Leave for about 30 secs then flip for another 30 secs. Serve and eat. It really is that quick and easy to have a healthy, nutritious, high protein breakfast. You can add any herbs, spices or salt you like while cooking or when serving for something a little different.
