Ingredients:

  • 1 bunch of fresh Kale
  • 1/2 cup shredded purple Cabbage
  • 1 grated Carrot
  • 1/2 fresh grated Beetroot
  • You're favourite dressing and/or some avocado to serve

Method:

It's just too simple... grate, chop or shred all ingredients as indicated above and mix them all together. You can serve it any way you like. Top it with some activated nuts/seeds, a bit of smashed avocado, your favourite salad dressing or a bit of fresh lime juice. 

Apple Cider Vinegar Salad Dressing

Apple Cider Vinegar has some amazing health benefits, but if you don't enjoy drinking it in your water you may be on the hunt for some other great ways to get it in your diet. Here is a great, basic and easy to make Salad Dressing recipe using Apple Cider Vinegar.

Ingredients:

  • 1 tblsp Braggs Apple Cider Vinegar
  • 3 tblsp Olive Oil
  • 1 Garlic Clove (freshly minced or crushed)
  • 1 tsp Lemon Juice
  • Pinch of Sea Salt and Pepper

Method:

Find an old jar with an air tight lid and place all ingredients in the jar. Secure the lid tightly so it won't leak and give it all a good shake. Then pour it over your favourite salad leaves and enjoy all the wonderful health benefits of Apple Cider Vinegar every day. 

Healthy Glazed Ham

If you're looking for something a little more healthy this Christmas lunch then this Ham Glaze will do the trick just nicely. It's all healthy, natural and mostly fresh ingredients and very simple to make.

Ingredients:

  • 3 Large Oranges (peeled and roughly chopped)
  • 1/2 cup Filtered Water
  • 2 tbsp Fresh Squeezed Lemon Juice
  • 1/2 tbsp Orange Zest
  • 1/2 tsp Lemon Zest
  • 1-2 tbsp Big Tree Farms Coconut Nectar
  • 1 tsp Ginger
  • 1 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • Pinch Sea Salt

Method:

Simply put all ingredients into a saucepan, stir and put on medium heat to simmer and reduce over about 15 mins. Allow to cool for 10 mins then puree with a stick blender or process in a blender. This will keep nicely in the fridge for about 3-4 days so you can prepare it a few days ahead or freeze and defrost when required.

Cacao is more commonly seen as raw chocolate, but what you may not realise is that it is a delicious addition to your savoury dishes too when used in its Raw and Unsweetend form. Try this Antioxidant rich powder as a savour spice in this amazing Crusted Chicken Recipe. 

Ingredients:

  • 1 Cup Almond Meal
  • 1 tblsp Paprika
  • 1 tblsp TRU RA Cold Pressed Cacao Powder
  • 1 tblsp Big Tree Farms Coconut Sugar
  • 1 tsp Himalayan Salt
  • 1tsp Oregano Powder
  • 1tsp Thyme Powder
  • 1/2 tsp Cumin Powder
  • Chilli Powder to taste (approx 1/2 tsp should do it)
  • 2 Fresh Minced Garlic Cloves
  • 2 Eggs
  • 1 Cup Almond Milk
  • 4 Free Range Chicken Breast Fillets
  • Banaban Coconut Oil for frying

Method:

Combine all the spices with the Almond Meal in a large bowl. In another bowl whisk the eggs and Almond Milk until well combined. Prepare your chicken to the size you want to serve, this may be in small strips or simply cut into schnitzel sized pieces. Now for the messy part... You need to dunk the Chicken into the egg mix first and then into the dry mix and make sure it is well coated. You can always go for a second dunk in both if you want a little extra crust. 

To cook you simply need to shallow fry the chicken. Pour enough Coconut Oil into the pan to cove the bottom at about a 1cm height. Once it oil is nice and hot simply place the chicken in the fry pan and flip until both sides are well browned and the chicken is cooked through. The time this will take will depend upon how thick you sliced the chicken to begin with. The smaller the pieces or the thinner they are, the quicker it will cook. 

Enjoy this with your favourite salad, with some Sweet Potato Mash, or even get creative with some Cauliflower Fried (no) Rice for a delicious, low carb, high protein meal. 

Easy Lemon Chicken with Asparagus

For a simple, delicious and nutritious lunch or dinner that is quick and easy to make try this amazing dish. It's packed full of protein and essential minerals. It also has many cleansing benefits in the Asparagus and Lemon juice.

INGREDIENTS: (for 2 serves)

  • Juice from 1/2 Lemon (or as much as you desire)
  • 300g Chicken Breast diced 
  • 8 Asparagus Spears cut in thirds
  • Pinch of dried chilli flakes
  • Pinch of Salt and Pepper

METHOD:

Stir Fry the chicken until browned and almost cooked through. Add the Asparagus, Lemon Juice and Spices and continue to stir through for another minute or two until the chicken is well cooked and the Asparagus is slightly softened. Simply serve and enjoy a delicious healthy meal!

A naturally fermented cabbage that is great for general health and digestion. Simple and easy to make and can be enjoyed as a side dish or a delightful addition to your favourite salad.

Ingredients:

  • 1 Large Cabbage (approx 1kg)
  • 1 Tblsp Nirvana Himalayan Salt
  • 3 Bay Leaves
  • 4 Peppercorns

Method:

Finely chop your cabbage and layer it and the salt (cabbage salt cabbage salt) in a large ceramic pot or glass jar. As you layer, gentle massage the salt into the cabbage to encourage the juices to release. Add bay leaves and peppercorns and store in a dark place for 1 week with a lit covering. 

After the week is up, simple store in the fridge, eat and enjoy. 

Spinach Avocado Almond Salad

Every ingredient in this amazingly delicious salad has been specifically chosen for its nutritious benefits. It is particularly high in magnesium for healthy heart, nervous system and sleep. 

Ingredients:

Salad

  •  4 Cups of Spinach
  •  1 Cup Cooked Kindred Organics Quinoa
  •  1 Red Capsicum chopped
  •  1 Ripe Avocado diced or sliced
  •  1 tsp Olive Oil 
  •  1/2 Cup Loving Earth Activated Almonds
  •  2 tsp Sesame Seeds

Dressing

  •  2 tblsp Lime Juice
  •  4 tblsp Olive Oil
  •  1 tsp crushed ginger

Method:

Salad

Coat the Almonds in Olive oil and Sprinkle over the Sesame Seeds and mix around until they are coated. Lay on a tray in the oven on medium-low temp until lightly toasted. Combine Spinach, Quinoa and Capsicum in a bowl and add almonds when they are ready. 

Dressing

In a small jar combine all dressing ingredients and shake until combined. Pour over salad and top with Avocado.
