Spinach Avocado Almond Salad

Every ingredient in this amazingly delicious salad has been specifically chosen for its nutritious benefits. It is particularly high in magnesium for healthy heart, nervous system and sleep. 

Ingredients:

Salad

  •  4 Cups of Spinach
  •  1 Cup Cooked Kindred Organics Quinoa
  •  1 Red Capsicum chopped
  •  1 Ripe Avocado diced or sliced
  •  1 tsp Olive Oil 
  •  1/2 Cup Loving Earth Activated Almonds
  •  2 tsp Sesame Seeds

Dressing

  •  2 tblsp Lime Juice
  •  4 tblsp Olive Oil
  •  1 tsp crushed ginger

Method:

Salad

Coat the Almonds in Olive oil and Sprinkle over the Sesame Seeds and mix around until they are coated. Lay on a tray in the oven on medium-low temp until lightly toasted. Combine Spinach, Quinoa and Capsicum in a bowl and add almonds when they are ready. 

Dressing

In a small jar combine all dressing ingredients and shake until combined. Pour over salad and top with Avocado.
